80–100 g karamelstroop (Spaans kant-
en-klaarproduct voor het bestrijken van
de puddingvorm)
500 ml melk
4 eieren
2 eidooiers
80 g suiker
geraspte schil van ¹/₂ citroen

Bereiding
Bedek de bodem en de wanden van de
puddingvorm/portievormpjes met kara‐
mel.
Verhit de melk met de citroenschil (niet
koken) en haal dit mengsel door een
zeef. Klop de eieren met de eidooiers
en de suiker in een schaal en voeg de
melk toe.
Start het automatische programma of
verwarm de oven voor.
Doe de massa in de puddingvorm of in
portievormpjes. Plaats deze op een uni‐
versele bakplaat en schuif de plaat in
de voorverwarmde oven. Doe ca. 1 l (90
cm toestel: ca. 2 l) warm water in de
universele bakplaat en bereid de flan in
het waterbad.
