Gebruik goed bestorven, mager vlees -
zonder pezen en vetrandjes. Het been
moet vooraf uit het vlees gesneden zijn.
Gebruik voor het aanbraden bijv.
boterolie of spijsolie die geschikt is voor
hoge temperaturen.
Dek het vlees tijdens het garen niet af.
De bereidingstijd is afhankelijk van de
gaarheid, de bruinering, de
hoeveelheid en de grootte van de
stukken vlees en bedraagt ongeveer 2-
4 uur.
Het vlees kan onmiddellijk worden
opengesneden. U hoeft het vlees niet
eerst even te laten staan.

Met de lage bereidings- en
kerntemperaturen
kan het vlees zonder problemen
worden warm gehouden, wanneer
het in de ovenruimte blijft tot het
