Légumes secs
Avant de les cuisiner, trempez les légumes secs pendant au moins 10 heures dans
de l'eau froide: ils seront plus digestes et leur temps de cuisson sera raccourci.
Les légumes secs trempés ne doivent pas être recouverts de liquide lors de la
cuisson.
Les lentilles ne doivent pas être trempées.
Avec les légumes secs non trempés, il convient de respecter les proportions spé-
cifiques légumes secs / liquide.
