Runderfilet gebardeerd
Baktijd ca. 30 - 60 minuten
Ingrediënten voor 4 personen:
800 g runderfilet middenstuk
200 g doorregen spek
2-3 eetlepels graanmosterd
Zout
Peper
1/2 bosje platte peterselie
1 bosje bieslook
Keukentouw
Bereiding:
1. Vet en pezen verwijderen uit het
vlees, kruiden hakken, mengen met
mosterd, zout en peper en op het vlees
doen.
2. Spek in dakpanvorm over elkaar leg-
gen, het vlees erop plaatsen,
omwikkelen met het spek en
vastbinden met keukentouw.
3. Vlees op het rooster plaatsen, de op
-
vangschaal in het onderste inschuifni
-
veau en het rooster in het 2e niveau
langs onder schuiven.

Pruimen op azijn
Ingrediënten voor 4 personen:
30 - 50 g bruine suiker
60 ml balsamicoazijn
150 ml droge rode wijn
2 kruidnagels
2 kaneelpijpjes
1 theefilter
Bindtouw
500 g pruimen zonder steen
1-2 eetlepels pruimenmoes
Zout
Suiker
Bereiding:
1. Suiker in een pot lichtbruin
karameliseren, blussen met azijn en
rode wijn.
2. Kruidnagels en kaneel in de theefilter
doen, met het touw tot een zakje
samenbinden, in de pot leggen en de
vloeistof laten reduceren tot een siroop.
3. De pruimen in vier stukken snijden,
bij de saus voegen en 5 minuten laten
meekoken. Kruidenbuiltje uitnemen.
4. Pruimenmoes toevoegen en met zout
en suiker op smaak brengen.
Tip:
Als de saus te dun is, met maïzena
binden.
