Filet in Blätterteig
Bratzeit ca. 40 Minuten
Zutaten für 4 Personen:
1 Schweinefilet à 400 g
Salz
Pfeffer
1 EL Butterschmalz
1 Paket runder Blätterteig
4 Scheiben gekochter Schinken
Füllung
1 kleine Karotte
1 kleine Zucchini
200 g Kalbsbrät
4 EL Sahne
60 g Tilsiter in Würfeln
4 Salbei - Blätter
Salz
Pfeffer
Zum Bestreichen
1 Eigelb
1 Prise Salz
1 TL Dosenmilch
Zubereitung:
1. Fleisch mit Salz und Pfeffer würzen
und in einer Pfanne in Butterschmalz
von allen Seiten anbraten.
2. Möhre schälen, in kleine Würfel
schneiden, Zucchini ebenfalls in kleine
Würfel schneiden. Beides in je 1 ge

lochten Garbehälter legen und bei
100 °C 2 Minuten garen. Abkühlen las
-
sen.
3. Kalbsbrät mit dem Gemüse mischen,
Sahne und Tilsiter hinzufügen.
4. Salbei fein schneiden und mit Salz
und Pfeffer zur Masse geben.
5. Teig auf die Arbeitsfläche legen,
Schinken darauf geben, Füllung gleich
-
mäßig darauf streichen und darauf das
Fleisch legen.
6. Blätterteig aufrollen und mit der
Nahtstelle nach unten auf ein gefettetes
Blech legen.
7. Eigelb mit Salz und Dosenmilch ver
-
rühren, Blätterteig damit bestreichen
und backen.
