Extraction de jus
Grâce à votre four vapeur, vous pouvez
extraire le jus des fruits moelleux ou lé‐
gèrement fermes.
Les fruits bien mûrs conviennent tout
particulièrement à l'extraction des jus
car leur jus est abondant et parfumé.
Préparation
Triez et lavez fruits ou légumes dont
vous voulez extraire le jus. Retirez tou‐
tes les parties abîmées.
Retirez les tiges des raisins et des ceri‐
ses qui contiennent des substances
amères mais ne retirez pas les tiges des
baies.
Coupez les gros fruits tels que les pom‐
mes en dés de 2 cm environ. Plus le
fruit ou le légume est dur, plus il doit
être coupé finement.
Conseils
Pour équilibrer le goût de vos jus,
pensez à mélanger les fruits sucrés et
les fruits acides.
La plupart des fruits donneront plus
de jus et leur arôme sera encore sub‐
limé si vous ajoutez un peu de sucre
puis les laissez ensuite reposer quel‐
ques heures. Nous vous conseillons
les proportions suivantes : 1 kg de
fruits sucrés pour 50 à 100 g de su‐
cre et 1 kg de fruits acides pour 100
à 150 g de sucre.
Si vous souhaitez conserver le jus
des fruits, versez-le encore chaud
dans des bouteilles propres puis fer‐
mez-les aussitôt.
Marche à suivre
Posez les fruits ainsi préparés dans
un plat perforé.
Placez un plat non perforé ou le plat
récupérateur juste en-dessous pour
en recueillir le jus.

Température : 100 °C
Temps de cuisson : 40-70 minutes
