Hak de zuring met het metalen mes en doe hem in de
koekenpan. Laten smelten. Voeg de room toe. Laat het meng-
sel ongeveer 15 min. inkoken* op laag vuur.
Controleer de smaak, voeg eventueel zout en peper toe.
Leg de forelfilets op warme borden.
Schenk de saus erover heen. Versier met de dille, de
bieslook, de citroenschijfjes en de wortelschijfjes.
Meteen serveren.

Bereid het deeg (zie blz. 47)Verwarm de oven voor op
180° C (gasstand 6).
Vet en bloem pan. Rol het deeg. Plaats deze inde mal. Prik
met een vork. postbakpapier bedekt met keramische kogels
ofgebreke van bonen (of rijst).
Blind bakken* gedurende 20 minuten.Snijd appels en schik
ze in concentrische cirkelsstrak.Kook 30 minuten.Bestrooi met
kristalsuiker en kaneel vóórserveer warm.
