Voor het blinibeslag
1. Verwarm de melk tot lauw (ca. 35°C) en scheid de eiwitten van de dooiers.
2. Los de gist met behulp van een vork op in de lauwe melk. Laat 1 minuut rusten.
3. Doe het meel, het zout, de eierdooiers en de melk met gist in de kom met het kneedmes.
Laat de machine ongeveer 30 seconden tot 1 minuut draaien.
4. Klop vervolgens gedurende 5 minuten de eieren stijf in de kom met de eiwitklopper,
nadat u eerst de aanduwer of de dop van het deksel verwijderd heeft.
5. Schep met de spatel eerst de crème fraîche en daarna de eiwitten voorzichtig door
het beslag.
6. Verwarm een blinipannetje. Beboter het en bak de blini’s ca. 1 minuut aan elke kant.
Voor de saus
7. Doe de crème fraîche, de St Môret
®
, het citroensap, het zout en
de dille in deze volgorde in de mini-kom.
8. Laat de machine 30 seconden draaien en zet de saus in de
koelkast.
9. Verdeel vlak voor het serveren de saus over de blini’s en
leg op elke blini een plakje zalm of een bergje zalmeieren.

7 g verse bakkersgist*
