Sopa de verduras
Para 6 personas
100 g de bacon
1/2 cebolla
2 patatas
2 zanahorias
1 puerro
1 diente de ajo
2 C. de mantequilla
Pimienta
1 l de agua
Preparación: 15 min • Cocción: 40 min
Pelar y cortar en trozos las verduras.
Haga volver el bacon con la cebolla cortada en una olla.
Añadir la mantequilla con las verduras y deje cocer 2
minutos moviéndose los. Añadir el agua, pimienta y deje
cocer a fuego lento aproximadamente 40 minutos.
Colocar todos los ingredientes en el vaso de la batidora y
accionar 1 minuto en función
.
Recalentar antes de servir.
Gazpacho
Para 4 personas
2 pequeñas rebanadas
de pan
4 tomates bien maduros
1 pepino
1 pimiento morrón rojo
2 cebollas frescas
pequeñas
1 diente de ajo
8 hojas de albahaca
fresca
80 ml de aceite de oliva
2 C. de vinagre balsámico
1 c. de pimiento de
Espeleta
Sal, pimienta de molino
12 aceitunas negras
(facultativo)
Preparación: 5 min • Cocción: 5 min
Remojar el pan en un poco de agua durante unos 10
minutos.
Escaldar los tomates para pelarlos más fácilmente, cortarlos
en 4 y exprimirlos para extraer las semillas y el zumo.
Pelar el pepino, cortar las cebollas en dos y retirar el
pedúnculo y las semillas del pimiento morrón. Cortar todas
las legumbres en trozos grandes. Pelar y retirar el germen
del ajo.
Colocar todos los ingredientes en la batidora, empezando
por el líquido. Salpimentar y añadir el pimiento de Espeleta.
Batir 1 minuto en función
.
Rectificar la sazón si es necesario y dejar reposar como
mínimo tres horas en el frigorífico.
Servir muy frío, acompañado con un hilo de aceite de
oliva y aceitunas.
