Beignets van kikkererwten
Marokko
Voor 4 personen
1 groot blik of 2 halve blikken
naturel kikkererwten
(d.w.z. 530 g uitgelekt gewicht)
2 teentjes knoflook
4 uien
1 eetlepel komijn
1 eetlepel gemalen koriander
2 eetlepels fijngesneden verse
koriander
1 ei
2 eetlepels bloem
zout, peper
2 lemmetjes
frituurolie
Voorbereiding: 15 minuten
Rusttijd: half uur
Baktijd: 4 minuten per serie
Laat de kikkererwten uitlekken. Schil de knoflook,
verwijder de kiem. Schil de uien en snijd ze fijn.
Vermeng de kikkererwten met de knoflook, de ui, de
komijn, de gemalen koriander en 1 eetlepel verse
koriander, het ei en de bloem. Ga geleidelijk te werk,
want kikkererwten hebben de neiging te plakken. Voeg
royaal zout en peper toe.
Zet het mengsel in een slakom gedurende 30 minuten
in de koelkast.
Verhit de friteuse tot 18 C. Neem met een lepeltje
kleine porties van het mengsel en bak ze in kleine series
gedurende ongeveer 4 minuten. Laat de beignets uitlekken
in de frituurmand en vervolgens op keukenpapier. Houd
ze warm terwijl u de volgende serie frituurt.
Leg de beignets op een schaal en versier de schaal met
schijfjes limoen. Strooi de rest van de verse koriander
erover.
