1. Verwarm de oven voor op 200 °C.
2. Snijd de onderkant van de spruitjes en snijd ze vervolgens van boven naar
beneden doormidden.
3. Verhit de olie in de braadpan op middelhoog vuur.
4. Leg de spruitjes met de gesneden kant naar beneden in de pan van zodra de
olie heet is. Doe de knoflook in de pan, bestrooi met zout en gemalen peper en
voeg de tijm toe.
5. Bak tot de spruitjes aan de onderkant goudbruin zijn.
6. Voeg het spek toe en zet de braadpan in de oven.
7. Bak op 200 °C tot de spruitjes bruin en gaar zijn (15–18 minuten). Schud de
pan om de 5 minuten. Prik vervolgens met de punt van een schilmesje in de
binnenkant van enkele spruitjes om te zien of ze gaar zijn.
8. Voeg de balsamicoazijn en het citroensap toe en roer om de spruitjes te
bevochtigen.
9. Verwijder de takjes tijm en breng eventueel op smaak met peper en zout.
Serveer heet of warm.

vet van spek)
8 knoflookteentjes, gepeld en gepureerd
½ tl grof zout
¼ tl gemalen zwarte peper
6 takjes tijm
8 plakjes dik gesneden spek, gekookt en
in hapklare stukjes gesneden
1/3 kopje balsamicoazijn
5 el citroensap, vers geperst
