Ingrediënten Bereiding

1. Verwarm de oven voor op 180 °C.
2. Bestrooi de varkensschenkels met zout en peper.
3. Verhit de olie bij een matige temperatuur in de Livington
Copperline WonderCooker op het fornuis en bruin de
varkensschenkels langs alle kanten aan.
4. De varkensschenkels uit de Livington Copperline
WonderCooker nemen en reserveren.
5. Voeg de uien, de wortelen, de selder, de knoflook, en de
sjalotten toe aan de Livington Copperline WonderCooker, en
4-5 minuten lang verhitten.
6. Voeg de boter en het meel toe en laat 3-4 minuten koken tot
het geheel romig wordt.
7. Voeg de wijn, de runderbouillon, de stukjes tomaten, het
laurierblad, de thijm, de rozemarijn, en de varkensschenkels
toe.
8. Laat het geheel koken en bedek vervolgens met de grillpan.
Bij 180 °C in de over plaatsen en gedurende 3,5 uren laten
sudderen tot het vlees zacht is en loskomt van het been.
9. Meng de ingrediënten voor de gremolata in een schaal.
10. Serveer elke schenkel met een sprinkel gremolata.

½ EL gemalen zwarte peper
¼ kop olijfolie
1 middelgrote ui, in blokjes gesneden
2 grote wortelen, in blokjes
2 stengels selder, in blokjes
3 fijngehakte teentjes knoflook
1 fijngehakte sjalot
1 pkg boter (ong. 115 g)
1/3 kop meel
½ kop witte wijn
3 koppen runderbouillon
½ kop tomaten in stukken
1 laurierblad
2 takjes thijm
1 takje rozemarijn
Gremolata
2 fijngehakte teentjes knoflook
De schil van een onbehandelde
citroen
¼ kop gehakte peterselie
2 EL olijfolie extra vergine
6 porties
Osso Bucco
