Ingredients:
150 g flour
1 pinch salt
150 g quark
150 g butter
For the filling:
200 g ham
1/2 onion
1 spring of parsley
Pepper
10 g butter
For the topping:
1 egg, separated
1 tsp. grated cheese
Tableware:
Preparation:
1. Sift the flour, add the salt and quark, add the cold pieces
of butter then quickly knead to form a dough and store in a
cool place for 30 mins.
2. Meanwhile, prepare the filling. Finely chop the ham, onion
and parsley and sauté with some pepper in a little butter.
} Microwave on maximum setting for 2 - 3 mins.
3. Roll out the dough between two pieces of cling film.
Remove the film, fold together like a book and roll out again.
Repeat the rolling and folding several times. Store in a cool
place once again.
4. Roll out the dough to the thickness of a knife, trace out
right angles, cover in egg white, 1 - 2 tsps. Place the filling
in the dough pieces, roll out and place on a baking tray lined
with non-stick baking paper. Baste with beaten egg yolk,
sprinkle with cheese and bake.
} 170 - 190 °C 25 - 30 mins or
} 180 °C on low microwave setting for 15 - 25 mins.

Ingredients:
100 g flour
100 g grated emmental or
parmesan
Salt
Paprika
100 g butter
For the topping:
Grated cheese
Paprika, caraway seed
Tableware:
Preparation:
1. Knead the flour, cheese, butter and herbs into a
shortcrust pastry, store in a cool place.
2. Roll out thinly and cut out oval-shaped biscuits. Cover
with egg yolk. Cover as required, place in a baking dish lined
with non-stick baking paper. Store in a cool place once again.
Bake until golden.
} 180 - 190 °C 15 - 20 mins.
