Conservazione dei alimenti essiccati
Appena essiccati gli alimenti devono essere conservati. Seguire le seguenti istruzioni, in modo da assicurare una
lunga durata e una perfetta conservazione dei sapori.
Contenitori idonei
Contenitori e sacchetti di plastica puliti, sottovuoto o chiusi ermeticamente sono idonei alla conservazione.
Una volta riempiti, eliminare più aria possibile dai sacchetti di plastica possono essere conservati in contenitori
di metallo (per esempio i barattoli del caffè) in modo da tenere lontano gli insetti. Non utilizzare sacchetti di
stoffa, carta o contenitori privi di chiusura ermetica.
Consigli pratici generali per la conservazione degli alimenti
• Aspettare che gli alimenti o i fiori essiccati siano completamente asciutti prima di conservarli.
• Il calore e la luce possono deteriorali. Conservarli in un luogo asciutto, fresco e al buio.
• Estrarre tutta l’aria possibile dai contenitori e chiuderli ermeticamente.
• La temperatura ideale per la conservazione è pari o al di sotto dei 15 °C.
• Non conservare gli alimenti essiccati direttamente in contenitori di metallo.
• Evitare contenitori che non siano ben chiusi.
• Nelle settimane successive, controllare il livello di umidità degli alimenti essiccati. In caso essa sia eccessiva,
far asciugare ulteriormente gli alimenti.
• Si consiglia di non conservare la frutta e le verdure essiccate per oltre un anno, per garantirne la qualità.
• Far asciugare i prodotti in estate e in un luogo fresco.
• Si consiglia di conservare la carne e il pesce essiccati per massimo 3 mesi, se messi in frigo, per non più di un
anno, se messi nel congelatore.
• Contenitori sottovuoto prolungano di diversi mesi la conservazione degli alimenti ben essiccati.
Luogo di conservazione
La conservazione al buio e in un luogo asciutto e fresco, garantisce la buona qualità dei prodotti essiccati. Se
posti su scaffali nelle vicinanze di finestre, i contenitori devono essere coperti da un panno, in modo da essere
al riparo dalla luce. Contenitori di plastica trasparenti devono essere rivestiti o messi in scaffali chiusi. Per evi-
tare fenomeni di condensa, si consiglia di non porre i contenitori direttamente su pavimenti o a contatto con
pareti di cemento che normalmente sono freddi e umidi. Non conservare gli alimenti essiccati nelle vicinanze
di oggetti o materiali che emanano odori forti (per esempio vernici, colori o cherosene).
