Pan de avena y miel
1-1/2 tazas (355 mL)
de agua
1/2 taza (120 mL)

Avena
Coloque el agua, la miel y la mantequilla en una
cacerola pequeña. Caliente a fuego lento hasta
que la mezcla esté muy caliente (120°F a 130°F
[49°C a 54°C]).
Primero coloque la avena, luego 5 tazas (1,2 L)
de harina, la sal y la levadura en el tazón de la
batidora. Conecte el tazón y el gancho para masa
a la batidora. Ponga la batidora en velocidad
2 y bata durante aproximadamente 15 segundos.
Continúe en velocidad 2, añada gradualmente
mezcla tibia a la mezcla de harina y bata
aproximadamente 1 minuto. Añada los huevos
y bata aproximadamente 1 minuto más.
Continúe en velocidad 2, añada la harina
restante, 1/2 taza (120 mL) a la vez y mezcle
aproximadamente 2 minutos o hasta que la masa
comience a limpiar los laterales del tazón. Amase
en velocidad 2 aproximadamente 2 minutos más.
Coloque la masa en un tazón engrasado
moviéndola para engrasar la parte de arriba.
Tape el tazón. Deje levar en un lugar cálido,
sin corrientes de aire, aproximadamente 1 hora
o hasta que se duplique en volumen.
Pique la masa y divida por la mitad. Dé forma de
pan a cada mitad tal como se indica en la página
80. Coloque en moldes para hornear engrasados
de 8-1/2 x 4-1/2 x 2-1/2" (21,25 x 11,25 x 6,25 cm).
Tape los moldes. Deje levar en un lugar cálido,
sin corrientes de aire, aproximadamente 1 hora
o hasta que se duplique en volumen.
Bata la clara y el agua con un tenedor para
juntarlas. Aplique la mezcla sobre los panes con un
pincel. Salpique con avena. Hornee a 375°F (190°C)
durante 30 ó 40 minutos. Retire de los moldes
inmediatamente y enfríe en rejillas de alambre.
Rinde: 32 porciones (16 rebanadas por pan).
Por porción: Aproximadamente 134 calorías,
4 g de proteínas, 24 g de carbohidratos,
3 g de grasa, 13 mg de colesterol, 162 mg
de sodio.
