Mettre le bœuf haché, les jaunes d’œufs, la chapelure, le parmesan, le persil,
le sel d’ail, l’origan, le poivre et les olives dans le bol du batteur. Fixer le bol
et le fouet plat au batteur. Régler à la vitesse 2 et mélanger pendant 1 minute.
Façonner le mélange en 30 boulettes de 1 po et les frire dans l’huile d’olive jusqu’à
ce qu’elles soient brunes. Égoutter sur des essuie-tout. Réchauffer la sauce barbecue
piquante et la verser sur les boulettes de viande. Servir chaud dans un plat-réchaud.
SAUCE BARBECUE PIQUANTE
DONNE: 2 TASSES
Combiner tous les ingrédients dans une casserole à fond épais. Bien mélanger et
faire cuire sur feu moyen pendant 10 minutes, en brassant de temps à autre. Réduire
le feu et laisser mijoter 30 minutes. Laisser refroidir la sauce, la couvrir et la garder
au réfrigérateur jusqu’à l’utilisation.
