En un sartén mediano a fuego medio, cocine el tocino
hasta que se dore. Retire el tocino; desmorone. Reserve.
Drene del sartén todo el aceite excepto 1 cucharada
(15 ml) de la grasa Agregue el ajo; cocine a fuego
medio alto durante 1 minuto, revolviendo con
frecuencia. Reserve.
En un tazón grande, combine la harina, el queso, la
albahaca, el polvo de hornear, el azúcar, la sal y la
pimienta. Agregue la leche, los huevos, el aceite, los
jitomates, el tocino y el ajo; mezcle hasta humedecer.
Pueden quedar algunos grumos.
Programe el temporizador de la waflera precalentada
en 3 minutos y 45 segundos. Unte 1 taza (235 ml) de
masa en la parte superior de la waflera. Cierre la parte
superior; inicie el temporizador y gire la waflera. Llene
el otro lado de la waflera; gírela de nuevo.
Cuando oiga la señal, retire el primer wafle. Retire el
segundo wafle. Repita con la masa restante. Sirva con
mantequilla parmesana.
