SCHARFE RINDFLEISCHJERKYS
Zutaten:
900 g magere Rinderlende
2 EL Salz
2 EL brauner Zucker
1 EL Zwiebel-Knoblauch-Pulver
1 EL Paprikapulver
2 TL Cayennepfeffer
2 TL getrocknete Chiliflocken
Frieren Sie das Fleisch vor dem Schneiden für 1 Stunde an, dann lässt es sich leichter
mit dem Allesschneider schneiden.
1. Alles sichtbare Fett wegschneiden und das Fleisch in Faserrichtung mit dem
Allesschneider in 2,5 cm breite und 5 mm dicke Streifen schneiden.
2. Alle trockenen Zutaten in einer großen Schüssel gründlich mischen und eine
trockene Marinade zubereiten.
3. Die Rindfleischstreifen in die Marinade geben und die Schüssel schwenken, bis
das Fleisch gleichmäßig mit Gewürzen bedeckt ist. Die Schüssel mit Frischhalte-
folie verschließen und das Fleisch im Kühlschrank 1 bis 2 Stunden marinieren.
4. Die Rindfleischstreifen aus der Schüssel nehmen, abklopfen, flachdrücken und
geradeziehen. Dann auf die Tabletts geben – nicht zu dicht, damit die Luft gut
zirkulieren kann.
5. 6 bis 10 Stunden bei 68 °C dörren. Das fertig gedörrte Fleisch sollte sich trocken
anfühlen und knacken, aber trotzdem nicht brechen, wenn man es biegt.
6. In einem luftdichten Behälter bei Zimmertemperatur aufbewahren.
ergibt 10 - 12 Portionen | Vorbereitungszeit: 2 Std. 30 Min. | Dörrzeit: 6 –10 Std.
