The process of decanting aerates the wine to bring forth and deepen the full and
rich variety of aromas within the wine. Via the contact with oxygen the full-bodied
taste will be developed. At the same time, the content of carbon dioxide and harsh
tannins will decrease leading to a quicker “maturing” of the wine, optimal displaying
the complete, smooth bouquet. When using a traditional wine decanter – which is
a bulbous flask with small neck – decanting will be a time consuming process. Only
in some special cases, some minutes will be sufficient. In most cases decanting will
last for up to 3 hours or even more. During this time, the wine will be exposed to
environmental conditions: dust, vapours, smoke, and temperature.
When alternatively using a wine finer, the wine will be aerated during pouring.
However, you will have no influence on the amount of oxygen, the wine will take
during decanting. This could produce insufficient results as the required extent of
aeration for getting the optimum taste could be different with each type of wine.
The Gastroback Home Sommelier will shorten the decanting process of several hours
to some minutes without the shortcomings of the traditional decanting processes. You
can verify the process easily via the control of the appliance. To make your decision
for the correct decanting time easier, you select the natural decanting time, which
is the decanting time, necessary for a traditional decanter. This way, each type of
wine can be decanted according to its particular needs.
PURIFIED AND HIGHLY CONCENTRATED OXYGEN
The Gastroback Home Sommelier filters the ambient air to remove any impurities
(moisture, dust, odours). Additionally, carbon dioxide is removed from the air and
oxygen is enriched at a high grade by separating it from nitrogen, which is the
main component of natural air. The upraised oxygen concentration is gained by the
advanced oxygen extraction system of the appliance without using any chemicals.
As a result, the Gastroback Home Sommelier aerates your wine with a constant
flow of purified and highly concentrated oxygen, thus increasing the efficiency of
the decanting process significantly in a time saving and quality enhancing way. In
contrast to the traditional decanting process, foreign substances, gases, odours, and
contaminants of the environmental air are kept away from the wine at a high degree.
This effect is attained via a layer of purified atmosphere that builds-up above the
wine during decanting. Any wine can be served with a constant quality, with almost
no influence of the environmental conditions during the decanting process. Neverthe-
less, this outstanding internal filter system is rated for an exceedingly long-lasting life-
time: approx. 30000 decanting processes under normal environmental conditions.
