Fermentation (Faire lever la pâte)
Le four combi-vapeur offre le climat idéal pour faire
lever la pâte et les préparations à base de pâte ou
encore les pâtons sans qu'ils ne se dessèchent.
Pour ce faire, utiliser le mode de fonctionnement
« Fermentation » V.
Avec ce mode de fonctionnement, aucun
préchauffage n'est nécessaire.
Le plat creux n'a pas besoin d'être recouvert par un
torchon humide. Laisser lever la préparation dure
moitié moins longtemps qu'avec la méthode
conventionnelle.
Le temps de cuisson indiqué est purement indicatif.
Laisser lever la pâte, jusqu'à ce qu'elle ait doublé
de volume.
