12. Don't let the end of the froth nozzle touch the
bottom of the jug as this could restrict the flow of
steam.
13. Once you have the desired amount of froth, turn the
control knob to the off position. Don't remove the jug
until the steam wand has stopped producing steam.
N.B. When you have switched the control knob back
to the off positon, steam will vent from the drip tray.
This is not a cause for concern. Water is being purged
through the machine to reduce the temperature ready
for the next coffee.
14. Let the frothed milk stand for approximetly 15–20
seconds prior to serving. This seperates the froth and
steamed milk. Then gently pour the hot milk into the
cup and spoon the froth on top of the milk.
Barista tip: Know when to turn off the steam by listening
to the sound of the frothing; when it is ready the sound of
the frothing will become quieter. The milk is ready as soon
as a soft, thick layer of froth has formed.

For a latté you can
froth deeper into the
jug and for a little
longer so that the
milk is all frothed to
a smooth velvety
texture.
