Crispy salad with
mango sauce
Knuspriger Salat mit
Mangosoße
INGREDIENTS:
1 mango, peeled and cut into cubes
250 ml fresh pineapple juice 1 pinch of
chilli powder 1 tsp fresh ginger-race,
finely chopped 1 tsp sesame oil
1/2 celeriac 1/2 cucumber 1 thick broc-
coli stalk 2 tbsp mixed seeds 1 handful
of coriander, coarsely chopped rocket
PREPARATION:
1. Set aside a few cubes of mango for
garnish. 2. Put the remaining mango in
the blender, together with the pineap-
ple juice, chilli powder, ginger root and
sesame oil, and mix it until smooth. Set
this sauce aside. 3. Cut the celeriac, cu-
cumber and broccoli stalk into strings. 4.
Put the vegetable noodles in a bowl and
pour a portion of the mango sauce on
the noodles. Store the rest in the fridge.
5. Arrange the rocket on the plates, put
the vegetable noodles on top and pour
the sauce over the noodles as desired. 6.
Finish off with the seeds, the coriander
and the cubes of mango.

ZUTATEN:
1 Mango, geschält und in Würfel ge-
schnitten 250 ml frischer Ananassaft
1 Prise Chilipulver 1 TL frischer Ingwer,
fein gehackt 1 TL Sesamöl 1/2 Knol

lensellerie 1/2 Gurke 1 dicker Strunk
eines Brokkoli 2 EL gemischte Samen
1 Handvoll Koriander, grob gehackt
Rucola
ZUBEREITUNG:
1.
Stellen Sie einige Mangowürfel zur
späteren Garnierung zur Seite. 2. Geben
Sie die restlichen Mangowürfel mit dem
Ananassaft, dem Chilipulver, dem Ingwer
und dem Sesamöl in einen Mixer und
mixen Sie alles zu einer glatten Mischung.
Stellen Sie die Soße beiseite. 3. Schnei
-
den Sie den Knollensellerie, die Gurke
und den Strunk des Brokkoli in Streifen.
4. Geben Sie die Gemüsenudeln in eine
Schüssel und gießen Sie einen Teil der
Mangosoße über die Nudeln. Bewahren
Sie den Rest im Kühlschrank auf. 5. Ver
-
teilen Sie den Rucola auf den Tellern mit
den Gemüsenudeln und gießen Sie die
verbliebene Soße nach Wunsch über die
Nudeln. 6. Mit den Samen, dem Koriander
und den Mangowürfeln dekorieren.
