Courgettespaghetti
Spaghetti de courgettes
au pesto
INGREDIËNTEN:
4 courgettes 100 g walnoten
200 g pijnboompitten 2 bosjes basili-
cum 2 bosjes rucola 2 el lijnzaadolie
2 el parmezaan 2 teentjes knoflook
BEREIDING:
1. Maak slierten van de courgettes en leg
deze voor enkele minuten in een kom
met heet water tot de sliertjes zacht zijn.
2. Rooster de walnoten en de pijnboom-
pitten in een droge pan. 3. Mix de noten
en de pitten, look en basilicum, rucola,
olie en parmezaanse kaas in een blender
tot een glad geheel. 4. Breng op smaak
met peper en zout. 5. Verdeel de pesto
over de courgetteslierten.
INGRÉDIENTS :
4 courgettes 100 g de noix 200 g de
pignons de pin 2 bouquets de basilic
2 bouquets de roquette 2 c. à soupe
d’huile de graines de lin 2 c. à soupe de
parmesan 2 gousses d’ail
PRÉPARATION :
1.
Coupez les courgettes en spirales, puis
mettez-les pendant quelques minutes
dans un récipient d’eau chaude jusqu’à ce
qu’elles soient tendres. 2. Faites griller
les noix et les pignons de pin dans une
poêle sèche. 3. Dans un blender, mixez
les noix, les pignons, l’ail, le basilic, la
roquette, l’huile et le parmesan jusqu’à
l’obtention d’un mélange lisse. 4. Assai-
sonnez. 5. Distribuez le pesto sur les
spaghetti de courgettes.
