Courgette spaghetti
Spaghetti aus Zucchini
INGREDIENTS:
4 courgettes 100 g walnuts 200 g
pine nuts 2 bundles of basil 2 bundles
of rocket 2 tbsp linseed oil 2 tbsp Par-
mesan cheese 2 cloves of garlic
PREPARATION:
1. Make strings of the courgettes and
put them in a bowl of hot water for a
few minutes until the strings are soft. 2.
Roast the walnuts and the pine nuts in a
dry pan. 3. Mix the nuts, garlic and basil,
rocket, oil and Parmesan cheese in a
blender until smooth. 4. Add pepper and
salt to taste. 5. Spread the pesto over the
courgette strings.
ZUTATEN:
4 Zucchini 100 g Walnüsse 200 g
Pinienkerne 2 Sträuße Basilikum 2
Sträuße Rucola 2 EL Leinsamenöl 2 EL
Parmesan 2 Knoblauchzehen
ZUBEREITUNG:
1.
Stellen Sie aus den Zucchini Streifen-
her und legen Sie diese für einige Minu-
ten in eine Schüssel mit heißem Wasser,
bis die Schlangen weich sind. 2. Rösten
Sie die Walnüsse und Pinienkerne ohne
Zugabe von Öl in einer Pfanne. 3. Mixen
Sie die Walnüsse und die Pinienkerne,
den Knoblauch, das Basilikum, den Ruco
-
la, das Öl und den Parmesan in einem Mi-
xer zu einer glatten Masse. 4. Würzen Sie
diese mit Pfeffer und Salz. 5. Verteilen
Sie das Pesto auf den Zucchinischlangen.
