HELADO DE NATA preparación en caliente
4 dl de leche
150 g de azúcar
2 dl de nata
3 yemas de huevo
Una pizca de sal
Batir las yemas con el azúcar hasta que la mezcla esté espumosa. A continuación,
añada poco a poco la leche y la nata. Calentar lentamente hasta el punto de ebullición,
pero sin dejar que hierva. Cuando la espuma esté más rme, la nata amarilla sube
hacia arriba. Retire la mezcla del fuego, deje que se enfríe y luego vierta la mezcla en
la heladera.
Tiempo en la heladera: + / - 30 minutos
HELADO DE VANILLA
1 vaina de vainilla
3 yemas de huevo
3 1/2 dl de leche
2 dl de nata
150 g de azúcar
Lave la vaina de vainilla y córtela longitudinalmente para que el aroma sea mejor.
Bata la nata y la leche y añada la vaina a la mezcla. Caliente todo y sáquelo del fuego
mientras cuece. Deje que se enfríe un poco. Mientras tanto, bata las yemas y el azúcar
hasta que estén espumosos. Retire la vaina de vainilla de la mezcla de leche tibia
y añada la mezcla poco a poco a la mezcla espumosa de yemas de huevo y azúcar.
Calentar de nuevo mientras se remueve, pero debe asegurarse de que no hierva.
Cuando todo se empieza a poner más rme saque la mezcla del fuego y deje que se
enfríe. A continuación, ltre la mezcla con un colador y viértala en la heladera.
Tiempo en la heladera: + / - 30 minutos

150 g de azúcar
150 g de cacao o chocolate puro
3 yemas de huevo
2 dl de leche
2 dl de nata
1 bolsa de azúcar de vainilla
