Estas son las proporciones correctas de los ingredientes para cualquier mezcla,
expresadas con el porcentaje que corresponde según la cantidad de harina:
Ingredientes Porcentaje Peso Taza medidora
Harina 100% 500 g. 3 tazas *1
Sal 2% 10 g. 1,5 cuch. café
Levadura en polvo 1% 5 g. 2 cuch. Café *2
Levadura fresca 2% 10 g. 1,5 cuch. café
Agua 60-62% 300-320 g. 3-3,2 dl
Aditivos posibles 1-2% 5-10 g. 1 cuch. café
*1: Los diferentes tipos de harina pueden hacer que varíe bastante el peso, a pesar de
tener el mismo volumen.
*2: La cantidad de levadura se puede aumentar si ya no está muy fresca.
Por lo menos se necesita una cucharadita de café, de azúcar para dar consistencia a la
levadura.
Los resultados dependen del tipo, calidad y lo fresca que esté la harina.

Leche 280 ml.
Agua 130 ml.
Mantequilla 24 g. (2 cuch. soperas)
