600 gr. small and firm aubergines
350 gr. peeled tomatoes
150 gr. mozzarella
40 gr. parsley
2 eggs
1 garlic clove
1 medium size onion
grated parmesan

Preparation
1.
Wash aubergines, cut them in thin and
round slices and keep them dipped in iced
water.

Pour about half glass of olive oil in a
round pan, large enough to arrange aubergi-
nes in one layer circle-shaped, add onion cut
in thin slices and put the pan in the oven set
on the MW function at the maximum power
for 2 minutes.

Put well-strained aubergines in the pan
arranging them in circle (a few in the centre),
add over all peeled and chopped tomatoes,
salt and pepper. Then cover the pan and
let aubergines cook for about 10 minutes.
4.
In a bowl, break the eggs, add mozzarella
cut in small pieces and the minced parsley
together with a garlic clove. When the
aubergine is pour eggs on aubergines, stirring
immediately, and arrange them making a
second regular layer. Dust everything with a
pinch of oregano and a lot of grated
parmesan and put again in the oven set at the
medium heat for 3 minutes. Finally set the
GRILL function for the last 2 minutes. Let
it stand in the oven for 2 minutes and serve it

:
It s a very tasty and rich dish which is
easier to prepare in the microwaves oven than
in the traditional one
.

MASHED POTATOES
Ingredients
900 gr. floury potatoes
150 gr. Single cream
70 gr. butter
salt
pepper
Preparation
1.
Peel, wash and dice the potatoes. Put them in a
pan, add 1/2 glass of boiling water and about half of the
butter, cover and put the pan in the oven at maximum
heat for 10 minutes. Rotate the pan after about 5 minutes

Alter cooking time, take potatoes out of the oven,
mash them using a fork (or a potato masher, if possible)
leaving the batter in the same pan
3.
Beat well, adding the remaining butter, the cream, a
pinch of pepper and the required sal
t.
4.
Put the pan back in the oven at medium heat for 5
minutes, stirring the mashed potatoes twice. Permit the
potatoes to stand in the oven switched off for 2 minutes
and serve
.
