1 cucharada de salsa de soya
2 cucharadas de aceite de sésamo tostado
¾ taza (175 ml) de aceite vegetal
1. Colocar todos los ingredientes, excepto el aceite, en el vaso. Usando
el accesorio licuador, licuar a velocidad 5 durante aproximadamente 15
segundos para picar.
2. Agregar el aceite. Licuar a velocidad 3 durante aproximadamente 30
segundos, hasta conseguir una mezcla homogénea.

Sopa primaveral de espárragos y puerro
Sopa de vegetales de primavera simple, sin embargo sabrosa.
Rinde aproximadamente 8 tazas (1.9 L)
2 dientes de ajo
2 puerros medianos (parte blanca y verde claro solamente),
en rodajas
2 cucharadas (180 g) de mantequilla sin sal
1–1½ cucharadita de sal kosher, a gusto
2–2½ libras (910 g–1.1 kg) de espárragos, sin la parte dura del tallo
y las puntas reservadas (opcional), cortados en trozos de
2 pulgadas (5cm)
1 papa roja grande, pelada y cortada en cubitos (mantener en
agua fría hasta el momento de usar)
¼ taza (60 ml) de vino blanco seco o coñac
¼ cucharadita de pimienta negra recién molida
5 tazas (1.2 L) de caldo de vegetales (cuanto más claro el
caldo, más verde la sopa)
1 cucharadita de jugo de limón fresco
"Crème fraîche" para decorar
Cebollinos ("chives") picados para decorar
1. Colocar el ajo y el puerro en el bol. Procesar a velocidad 5 durante
aproximadamente 8 segundos para picar. Reservar.
2. Derretir la mantequilla a fuego medio, en una olla mediana. Una vez
derretida, agregar el ajo, el puerro y ½ cucharadita de la sal; revolver
hasta que empiece a crepitar, y luego tapar la cacerola y rehogar
durante 5–10 minutos, hasta que estén muy suaves.
3. Agregar los espárragos (no las puntas) y la papa. Revolver para cubrir y
saltear durante aproximadamente 10 minutos, hasta que los vegetales
estén suaves. Agregar el vino blanco o el coñac y cocer, revolviendo,
hasta que el vino se haya evaporado. Agregar la sal restante, la
pimienta y el caldo de vegetales. Dejar hervir, luego reducir el fuego.
