Pour la grillade directe
(utilisant la chambre de cuisson principale comme gril de charbon)
Suivez les directives d’allumage ci-dessus, mais remplissez les
plateaux de diffusion dans la grande chambre à cuisson de charbon
enflammé, positionnez-les à une profondeur uniforme, et contrôlez
la température à l’aide des registres d’entrée et d’évacuation. Il est
préférable d’utiliser la cheminée de démarrage pour enflammer
de grands volumes de charbon. Une fois enflammés, déposez les
charbons sur les plateaux, et repositionnez les grilles de cuisson à
l’aide du lève-grille fourni. Avis : Plus le charbon est exposé à l’air,
plus il devient chaud – gardez le couvercle levé en grillant afin de
réaliser une chaleur plus intense.
En grillant, laissez le registre interne ouvert afin de permettre à l’air
de circuler dans la chambre de cuisson.

la température de cuisson en régulant le flux d’air circulant à
travers des registres d’entrée et d’évacuation. Plus vous ouvrez
les registres, plus l’air circule entre les charbons. Plus l’air circule
entre les charbons, plus la température augmentera. De petits
ajustements peuvent faire une grande différence au niveau de la
température de cuisson.
