Spargelsalat mit Ei und
würziger Sahnesauce
(für einen Dampfkorb)
Zutaten für 4 Portionen
500 g frischer Spargel; 4 Eier
Für die Sahnesauce:
150 g Saure Sahne 1 TL scharfer Senf
1 EL Mayonnaise Pfeffer, Salz
1 EL Ketchup oder

Chilisauce
Flüssigkeitsmenge im Bodengefäß:
maximale Füllstandsmarkierung

Die Schalen der Eier anstechen, in den
Dampfkorb geben und 20 Minuten garen.
Inzwischen Spargel schälen, Petersilie
waschen und bis auf einige Sträußchen
hacken.
2.
Wenn nach der Garzeit kein Dampf
mehr im Gerät sichtbar ist, Eier aus dem
Dampfkorb nehmen, unter fließend kaltem
Wasser kurz abschrecken und beiseite
stellen. Spargel in den Dampfkorb legen
und 25 Minuten garen.
3.
Für die Sauce saure Sahne,
Mayonnaise, Ketchup und Senf verrühren
und mit Pfeffer (frisch aus der Mühle), Salz
und Petersilie abschmecken. (Wenn Sie ein
Braun Küchengerät mit Zerkleinerer besit-
zen, können Sie die Sauce in einem einzi-
gen Arbeitsgang im Nu herstellen.)
4.
Den Spargel etwas abkühlen lassen
und in Stücke schneiden. Eier schälen und
in Scheiben schneiden.
5.
Zum Servieren Spargel und Ei scheiben
auf einer Platte anrichten und mit der
Sahnesauce begießen. Zum Schluß mit den
restlichen Petersilien sträußchen garnieren.
Insalata di asparagi
(con una vaschetta di cottura)
(per 4 persone)
500 g di asparagi freschi; 4 uova
Condimento:
150 g di panna acida
1 cucchiaio di maionese
1 cucchiaio di ketchup o salsa chili
1 cucchiaino di senape forte
pepe, sale
1 mazzetto di prezzemolo
Quantità di acqua da versare nella base:
fino al livello massimo

Mettete le uova con il guscio nella
vaschetta per la cottura a vapore e fate
cuocere per 20 minuti. Nel frattempo
pulite gli asparagi, lavate il prezzemolo e
tritatene alcuni ciuffi. Per velocizzare
l’operazione potete utilizzare l’accessorio
tritatutto di Braun Minipimer

A cottura ultimata, quando non esce
più vapore dall’apparecchio, togliete le
uova dalla vaschetta e fatele raffreddare
sotto acqua fredda corrente; tenete da
parte. Ponete gli asparagi nella vaschetta
per la cottura a vapore. Fate cuocere per
25 minuti.

Mischiate la panna acida, la maionese,
il ketchup, la senape ed aggiungetevi il
pepe, il sale ed il prezzemolo.
4.
Lasciate raffreddare leggermente gli
asparagi e tagliate a pezzetti. Sgusciate le
uova e tagliatele a fette.
5.
Disponete su un piatto gli asparagi
e le fette di uovo; versatevi sopra il
condimento e guarnite con alcune foglie
di prezzemolo intere.
