Akrylamid i levnedsmidler
Akrylamid opstår primært i korn- og kartoffelprodukter, som
bliver tilberedt ved meget høje temperaturer. Det drejer sig
f.eks. om kartoffelchips, pommes frites, toast, rundstykker, brød
eller fint bagværk (kiks, honningkager, spekulatius).
Prøveretter
Disse tabeller er blevet fremstillet til brug for forskellige
prøvningsinstitutter for at lette kontrol og test af de forskellige
apparater.
I henhold til EN 50304/EN 60350 (2009) og IEC 60350.
Bagning
Bagning i 2 lag:
Sæt altid universalbradepanden ind over bagepladen.
Bagning i 3 lag:
Sæt universalbradepanden ind i midten.
Sprøjtede småkager:
Plader, der sættes i ovnen samtidig, er ikke nødvendigvis
rdige på samme tid.
Æblekage med låg, bagt i 1 lag:
Placer mørke springforme forskudt i forhold til hinanden.
Æblekage med låg, bagt i 2 lag:
Sæt mørke springforme forskudt over hinanden, se billedet.
Kager i springforme af hvidblik:
Bag med over/undervarme
% i 1 lag. Anvend
universalbradepanden i stedet for risten, og sæt springformene
på den.
Bemærk: Anvend først den laveste af de angivne temperaturer
ved bagningen.
Tips om tilberedning med lavt akrylamidindhold
Generelt
Hold tilberedningstiden så kort som muligt.
Retterne må ikke brunes alt for kraftigt, men skal være gyldenbrune.
Ved stegning dannes der mindre akrylamid i store stykker.
Bagning Med over-/undervarme maks. 200 °C.
Med 3D-varmluft eller varmluft maks.180 °C.
Småkager Med over-/undervarme maks. 190 °C.
Med 3D-varmluft eller varmluft maks.170 °C.
Æg eller æggeblomme formindsker dannelsen af akrylamid.
Pommes frites i ovn Fordel dem jævnt og i ét lag på pladen. Bag mindst 400 g pr. plade, så pommes fritene
ikke bliver tørre
