TEĽACIA ROLÁDA

Prísady
na 4 – 6 porcií

700 g teľacích stehien
(asi 4 - 6 odrezkov po 120 - 150 g)

2 cibule

50 g uhoriek (nakladačiek)

50 g chudej šunky

2-3 polievkové lyžice stredne ostrej horčice

soľ a korenie

2 polievkové lyžice oleja

400 ml teľacieho vývaru
Príprava
Rezne naklepte, cibuľu, uhorky a šunku nak-
jame na kocky. Všetko vymiešajte s horčicou na
jemnú hmotu. Rolády osoľte a okoreňte a do-
prostred na ne rovnomerne naneste pripravenú
hmotu. Odohnite strany, roládu pevne zrolujte,
omotajte niťou alebo pomocou jemnej špikova-
cej ihlice a pozdĺžne nakrájaných prúžkov slaniny
spojte tak, aby roláda držala pohromade.
Rozpáľte olej a rolády na ňom sprudka zo všet-
kých strán urestujte. Zalejte teľacím vývarom a
pri kryté (pri strednom stupni) duste, až bude
mäso mäkké.
Nakoniec odstráňte nite aj ihlice, vložte rolády do
pohárov, zalejte výpekom 3 cm pod okraj pohára
a zavárajte 75 minút pri 100°C.
KYSNUTÝ HROZIENKOVÝ KOLÁČ V POHÁRI
Prísady

500 g múky

1/8 - ¼ l mlieka

3 - 4 vajcia

80 g cukru

12 g čerstvého droždia alebo ½ balíčka
sušeného

štipka soli

150 g masla

200 g hrozienok
Príprava
Droždie zamiešajte do vlažného mlieka, pridajte
rozpustené vlažné maslo, soľ, cukor a vajcia, všetko
zmiešajte dohromady a nakoniec zamiešajte pre-
siatú múku. Cesto prepracujte a nechajte prikry
stáť cez noc.
Ďalší deň cesto prepracujte znovu tak, aby sa ne-
dotýkalo stien misy, zároveň rýchlo zapracujte
hrozienka.
Sklenený poklop vymažte tukom a vysypte str-
úhankou alebo strúhanými orechmi.
Pohár naplňte cestom zhruba do polovice a ne-
chajte ešte krátko kysnúť.
Potom ich uzavrite poklopom a svorkami. Peče-
nie a zaváranie prebieha súčasne v horúcej vodnej
kúpeli 120 minút pri 100°C.
