que se calienten en la sopa.

Risotto de cangrejo
Ingredientes para 3-4 personas:
3 Cucharadas de aceite
1 Cebolla
2 Dientes de ajo
400 g Arroz para risotto
800 ml Caldo de verduras
200 ml Vino blanco
3 Porciones de cangrejo
Perejil y romero picados
Sal y pimienta
Poner el aceite de oliva en la olla a
presión y rehogar las cebollas en trocitos
pequeños y el ajo aplastado hasta que
vayan quedando transparentes. Añada el
arroz, sazone con sal y eche el caldo de
verduras y el vino blanco. Cierre la olla;
el tiempo de cocción necesario es de
aproximadamente 10 minutos al nivel de
presión II. Abra después la olla (método
rápido) y añada el cangrejo y las hierbas
picadas. Llevar el risotto a ebullición sin
dejar de remover. Salpimentar al final.
