Tipps und Tricks zu Heissluft + Beschwaden
Bei der Zubereitung von spritzenden Lebensmitteln wie Fleisch, Geflügel, etc. soll-
ten die Einstellung der Garraumtemperatur 180 °C nicht überschreiten. Bei höhe-
re Temperaturen spritzt vermehrt Fett an die Garraumwände und bildet dort
deutlich sichtbare, dunkle Flecken, die nicht mehr zu entfernen sind.
Tipps und Tricks zur Heissluft
Backzeiten können durch höhere Garraumtemperaturen nur bedingt verkürzt wer-
den. Das Backgut ist dann zwar aussen gar, aber innen noch roh oder teigig. Stel-
len Sie in diesem Fall die Backtemperatur etwas niedriger ein und verlängern Sie
die Gardauer.
Überprüfen Sie beim Backen mit Heissluft, ob die verwendete Auflage mit den
Empfehlungen in der Tabelle übereinstimmt. Stellen Sie Backformen oder hohes
Gebäck nicht direkt vor die Garraumrückwand. Allgemein gilt, dass bei niedrige-
rer Temperatur eine gleichmässigere Bräunung erreicht werden kann.
