9.2 Geschmorte Paprika mit Quinoa
Poronen: 2
Zubereitungsdauer: 20 - 30 Minuten
Zutaten:
100g Quinoa
4 Paprikaschoten (rot)
300ml Gemüsebrühe
120g Pilze
100g geriebener Parmesan
Currypulver
1 Teelöel Fenchel (gemahlen)
1 Schaloe
1 Knoblauchzehe
1 - 2 Esslöel wahlweise Sonnenblumenöl / Rapsöl / Olivenöl
Bie vorab die Quinoa unter kaltem Wasser gründlich waschen, um die mögli-
cherweise enthaltenen Bierstoe auszuspülen. Dann 300ml Gemüsebrühe mit
dem Fenchel erhitzen und die Quinoa darin 10 Minuten kochen lassen. Darauin
die Quinoa vom Herd nehmen und weitere 10 Minuten aufquellen lassen. Un-
terdessen die Paprikaschoten unterhalb des Sels rundherum einschneiden und
diesen samt Strunk vorsichg heraustrennen. Die Paprika vollständig entkernen.
Außerdem die Schaloe sowie den Knoblauch schälen und zerkleinern. Dann die
Pilze klein schneiden und mit dem Currypulver, den Schaloen- und Knoblauch-
stückchen in einer Pfanne kurz anbraten. Schließlich die Quinoa mit den Pilzen
vermengen und Parmesan hinzufügen und die Paprika damit befüllen. Die Paprika
mit etwas Öl für etwa 12 – 15 Minuten bei ca. 160 °C in die Arendo Heißlufrit-
teuse stellen.
