Paprika braisé au quinoa

Durée de la cuisson : 20 - 30 minutes
Ingrédients :
100 g de quinoa
4 poivrons (rouge)
300 ml de bouillon de légumes
120 g de champignon
100 g de parmesan râpé
Curry
1 cuillère à thé de fenouil (moulu)
1 échaloe
1 gousse d'ail
1 - 2 cuillère à soupe au choix de l'huile tournesol / huile de colza / huile
d'olive
En premier lieu, laver minueusement du quinoa dans l'eau froide pour éliminer
éventuellement les substances amères existantes. Ensuite, réchauer les 300ml
de bouillon de légumes avec du fenouil et faire cuire le quinoa pendant 10 mi-
nutes. Enlever le quinoa du four et laisser goner 10 minutes de plus. Entretemps,
découper les poivrons en rondelles au-dessous de la ge et rerer délicatement
avec le trognon. Dénoyauter complètement le paprika. Éplucher et écraser l'écha-
loe ainsi que l'ail. Ensuite, découper les champignons en pets morceaux et
rôr brièvement avec du curry, les morceaux d'échaloe et d'ail dans une poêle.
Finalement, mélanger le quinoa avec les champignons et ajouter du parmesan,
remplir le tout de paprika. Placer le paprika avec un peu d'huile pendant 12 – 15
minutes à 160 °C environ dans le four mulfoncon Arendo.
