Velouté de tomates
Ingrédients:
1 oignon, petit
1 gousse d’ail épluchée
2 cs d’huile
2 cs de marc de tomate
750 g de tomates épluchées
400 ml de bouillon de légumes
Sel, poivre, poudre de paprika doux, une
prise de sucre
100 g de crème à fouetter
100 g de crème acidulée
1 cs d’origan (séché)
6 feuilles de basilic
150 g de fromage féta en dés
½ botte de ciboulette fraîche
Préparation:
Ajouter l’oignon et l’ail dans le récipient de verre, écraser avec la fonction Stir. Pousser
les ingrédients de la paroi vers le fond à l’aide d’un racleur de bois ou plastique. Ajou-
ter le marc de tomate et l’huile, faire sauter avec la fonction High pendant 2 minutes.
Ajouter les tomates épluchées, le sel, le poivre, le sucre, la poudre de paprika et le
bouillon de légumes. Faire mijoter le tout pendant 13 minutes avec la fonction High,
remuer de temps en temps avec la fonction Stir. Ajouter à la fin la crème à fouetter et
la crème acidulée, terminer la cuisson pendant 5 minutes avec la chaleur résiduelle.
Réduire en purée au niveau1-4. Servir le velouté dans les assiettes, en ajoutant le fro-
mage féta, saupoudrer d’origan et garnir de basilic.
