Suggestion de présentation:
disposez la glace à l’aide d’une boule à glace sur 4 petites
assiettes. Nappez de sauce moka et saupoudrez d’amandes
effilées.
Glace au yaourt et à la mangue
Ingrédients:
2 grosses mangues,
1 fruit de la passion,
15 ml de jus d’orange frais pressé,
1/2 cuillerée à dessert de jus de citron,
le zeste râpé d’1/2 citron,
0,5 cuillerée à soupe de sucre,
2 dl 1/2 de yaourt, basilic frais.
Instructions:
Épluchez 1 mangue et coupez-la en morceaux. Réduisez-la en
purée avec la chair du fruit de la passion, le jus d’orange et le
jus de citron, le zeste de citron, le sucre et le yaourt.
Faites tourner ce mélange dans la sorbetière pour qu’il
obtienne la consistance de la glace. Réduisez la moitié de
l’autre mangue en purée et coupez le reste en rondelles. Après
sa confection dans la sorbetière, mettez la glace environ une
demi-heure au freezer. Garnissez la glace d’une cuillerée de
purée de mangue, de rondelles de mangue et d’une feuille de
basilic.
