Carne picada (de cerdo)
150 g de escalope de cerdo, 1/2 cebolla, 1 yema de huevo, sal, pimienta
Picar todos los ingredientes con la cuchilla para picar.
Con la cuchilla puede picar también chocolate, finas hierbas, nueces, trozos de pan seco, queso,
rábano picante, jengibre, etc.
Albóndiga de hígado como guarnición para la sopa
150 g hígado de vacuno, 1/2 cebolla, 1 panecillo humedecido y escurrido, 2 cucharadas de pan
rallado, 1 huevo, sal, pimienta, nuez moscada
Picar muy finos todos los ingredientes con la cuchilla para picar. Calentar un litro de caldo de ter-
nera. Con una cucharilla coger pequeñas porciones de masa e introducirlas en el líquido hirviendo
hasta que estén hechas.
Pesto de albahaca
2 cucharadas de piñones, 1-2 puñados de hojas de albahaca, 1 diente de ajo, 2-3 cucharadas de
aceite de oliva, 1-2 cucharadas de queso parmesano rallado, sal y pimienta al gusto
Tostar los piñones en una sartén (secos, sin añadir aceite) y dejarlos enfriar. Añadir las hojas de
albahaca, los piñones, el diente de ajo pelado, el aceite y el queso parmesano en la picadora ul-
trarrápida y triturar la masa hasta conseguir la consistencia deseada. Salpimentar al gusto.
