Leverknoedels voor in de soep
150 g runderlever, 1/2 ui, 1 ingeweekt, uitgedrukt broodje, 2 el paneermeel, 1 ei, zout, peper,
nootmuskaat
Alle ingrediënten met het hakmes fijnhakken. 1 liter runderbouillon verhitten. Met een kleine
theelepel kleine propjes uit het deeg steken en in de kokende bouillon doen, gaar laten worden.
Basilicum-pesto
2 el pijnboompitten, 1-2 handvol basilicumbladeren, 1 teentje knoflook, 2-3 el olijfolie, 1-2 el
geraspte Parmezaanse kaas, zout en peper naar smaal
Rooster de pijnboompitten in een pan (droog, zonder olie toe te voegen) en laat deze vervolgens
afkoelen. Doe de basilicumbladeren, de pijnboompitten, het geschilde teentje knoflook, de olie en
de Parmezaanse kaas in de hakmolen en pureer de massa tot de gewenste consistentie. Breng op
smaak zout en peper.
