all ingredients except the feta in a bowl. Make a salad dressing of lemon juice,
oil, oregano, salt, pepper and, if desired, diced garlic, and sprinkle it over the
vegetables. Sprinkle the feta over the salad, just before serving so that the salad
is not mushy.
Fruit salad
Apples, pears, bananas, kiwi, etc. as desired, lemon juice, a little pineapple
juice, honey as desired
Cut spirals of apples and pears. Peel the other fruits if necessary and cut them
in small pieces. Season with a little lemon juice and pineapple juice, and with a
little honey as needed.
Fried spaghetti
4 portions
800 g long-shaped potatoes, 1 finely chopped onion, 100 g streaky bacon, finely
diced, 1 tsp cumin seed, salt, pepper, 1 tbsp frying fat
Wash potatoes. Peel potatoes, if preferred. Cut potatoes into spaghetti, using
the spiralizer (3.5 mm cutting cone). Heat the frying fat in a pan, add spaghetti
and fry slowly. Stir regularly. After 5 minutes, add bacon, onion and cumin and
fry until brown. Season with salt and pepper. Tip: Instead of cumin seed, add
2 tbsp of chopped parsley. Serve with cucumber spaghetti salad on a dill cream
dressing.
Potato spirals on skewers
4 portions
800 g long-shaped potatoes, 2 cloves of garlic, 3 tbsp olive oil, 2 dashes of
tabasco, 1 ½ tsp paprika powder, long wooden skewers
Wash potatoes. Peel potatoes, if preferred. Cut potatoes into spaghetti, using the
spiralizer (55 mm cutting cone). Peel garlic. Mix garlic, oil, tabasco and paprika
powder with a hand-held blender (e.g. ESGE hand blender). Briefly marinate
potato spaghetti in mixture and place on skewers. Pre-heat oven to 220 °C (top
and bottom heat). Place baking paper on baking tray and arrange skewers on
tray so that they do not touch each other. Bake for 30 to 40 minutes until crisp.
Turn over once. Season with salt and pepper. Tip: Delicious with quark spiced
with herbs.
