41. GEGRILDE TOMATENBRUSCHETTA

Aanbevolen wijn : Sangiovese di Romagna
Ingrediënten voor 4 personen:
4 rijpe grote tomaten
½ theelepel verse majoraan
6 eetlepels olijfolie extra vierge
2 eetlepels rode wijnazijn
1 theelepel rietsuiker
1 gehalveerde teen knoflook
110 g gemarineerde artisjok in plakken
1 eetlepel gehakte peterselie
peper en zout
Bereiding:
Snijd wat brood en leg dat op de gril. Halveer de tomaten en verwijder het zaad. Leg
ze met de snijkant naar beneden op de gril. Doe olie, azijn, majoraan, suiker, en peper
en zout in een afsluitbare fles. Goed schudden. Bestrijk de tomaten met de helft van
dit mengsel en laat 15 minuten bakken. Bestrijk ongeveer halverwege de baktijd
nogmaals met het mengsel. Haal nu de tomaten van de gril en houd ze warm. Toast
de sneetjes brood, wrijf ze in met de knoflook en besprenkel ze met olie. Leg het
brood op een schaal en leg daar de tomaten op. Leg de gemarineerde artisjok
plakken op de bruschetta’s en garneer met peterselie.
