38. GEGRILDE ZWAARDVIS MET PETERSELIE

Aanbevolen wijn : Chardonnay di Terlano
Ingrediënten voor 4 personen:
4 zwaardvisfilets
1 bosje peterselie
40 g pijnboompitten
1 teentje knoflook
2 ansjovisfilets in olie
schil van een onbehandelde citroen
1 pittige rode peper
5 eetlepels olijfolie extra vierge
zout
Bereiding:
Snijd de steeltjes van de peterselie en was en droog de blaadjes. Maak de teen
knoflook schoon en snijd de peper in kleine stukjes
Doe peterselie, knoflook, pijnboompitten, ansjovis, citroenschil en olie in een blender.
Breng de saus op smaak met zout en roer de fijngesneden peper er door.
Gril de vis ongeveer 5-6 minuten aan beide zijden en gebruik een spatel om de vis te
keren.
Leg de vis op een serveerschaal en schenk er de peterseliesaus over heen. Heet
serveren.
