12. VARKENSKARBONADES IN MUNTSAUS

Ingrediënten voor 4 personen:
1 ribstuk van 500 g
grof zout
Ingrediënten voor de saus:
½ eidooier
½ citroen
4 eetlepels olijfolie extra vierge
1 eetlepels verse room
1 takje munt
zout
Bereiding:
Terwijl de gril opwarmt snijdt u het ribstuk aan de kant waar het vet zit in en
bestrooit u het vlees aan beide zijden met zout. Leg het vlees op de gril. Klop
ondertussen de ½ eidooier los met zout en 3 druppels citroensap. Voeg beetje bij
beetje de olijfolie toe en voeg als laatste de room toe. Roer er dan de fijngehakte munt
door en zet de saus weg.
Keer het vlees op de gril en laat bakken waardoor er een krokant korstje ontstaat
maar het vlees nog medium rare van binnen blijft. Breng op smaak met zout en snijd
het vlees in dikke plakken waarbij u het vlees van het bot snijdt. Serveer het vlees
met een scheut van de muntsaus.
