Gebakken champignons met knoflook en peterselie:
Ingrediënten voor 4 personen
:
500 g champignons
¾ lepels olie
2 teentjes knoflook
Fijngehakte peterselie
Versgemalen peper
Bereiding:
Maak de champignons schoon met een licht vochtige doek, droog ze en snijd ze in
plakjes. Smoor de knoflook in de olie. Haal de knoflook uit de pan en voeg de
champignons toe. Temper het vuur en laat 35-40 minuten smoren, totdat ze zacht
zijn. Voeg enkele lepels bouillon toe wanneer de champignons hun vocht verliezen.
Voeg vlak voor het serveren de peterselie toe.
Gebakken courgette:
Ingrediënten voor 4 personen:
500 g courgette met bloem
300 g bloem
100 g kappertjes
100 g ansjovisfilets
100 g zwarte olijven
1 eetlepel gehakte peterselie
2 teentjes knoflook
Peper en zout
Boter en olie
Bereiding:
Haal de bloemen van de courgette af, was ze en droog ze. Was en droog de
courgettes en snijd ze in de lengte in repen. Rol de repen door de bloem en bak ze in
de olie.
Doe wat boter in een pan, leg de courgetterepen naast elkaar op de bodem van de
pan, strooi er de kappertjes overheen, evenals de gehakte olijven, ansjovis, peterselie
en knoflook. Leg daar weer een laag courgetterepen over heen en zo verder.
Verwijder de stamper uit de courgetteblo0em evenals bijna alle bloembladeren. Leg
deze bovenop de courgetterepen, strooi er wat peper over en smoor ongeveer een
half uur.
