Broccoli & Rode Paprika quiche: (6 porties)
Voorbereidingstijd: 15 minuten
Bereidingstijd: 1 uur
Ingrediënten:
Deeg:
300 gr bloem
125 gr boter
snufje zout
Vulling:
500 gr broccoli
2 middelgrote uien, in halve ringen gesneden
1 grote rode paprika
2 eetlepels zonnebloemolie
6 eieren
350 ml melk
150 gr cheddar kaas
melk of water om te mengen
1 eetelepsl gedroogde gemengde kruiden
2 theelepels Dijon mosterd
zout en peper
Bereiding:
1. Kneed de boter door de bloem met het zout en het vocht tot een stevig, licht elastisch deeg.
Vet een balkblik in met olie, rol het deeg uit en leg het in het bakblik. Licht aandrukken. Snijd
de randen bij. Doe wat aluminiumfolie over het deeg, druk een beetje aan, bak het deeg 15-20
minuten voor op een temperatuur van 150 °C.
2. Bak de ui en de paprika lichtjes aan in 5-10 minuten. Blancheer de broccoliroosjes even in
kokend water. Ze moeten frisgroen blijven en nog een beetje krokant. Klop de eieren los met
de melk en de mosterd.
3. Schep de groente op de quichebodem en bestrooi met peper, zout kruiden en kaas. Schenk
het ei-melkmengsel er overheen en bak in 40 minuten gaar bij een temperatuur van 180 °C.
De quiche is klaar wanneer het ei gestold is en de vulling goudbruin is gekleurd.
