Za jednu štrucu od cca
800g
• 500g brašna za kruh s
žitaricama 250ml mlake
vode
• 10g suhog kvasca
• 10g soli
• Zobene pahuljice za
posipavanje
• 250g brašna
• 5g soli
• 25g šećera
• 100g maslaca
• 2jaja + 1žutanjak
• 3velike žlice mlakog
mlijeka te 2velike žlice vode
• 5g suhog kvasca
Stavite brašno, sol i kvasac u inox posudu. Postavite nastavak za miješenje. Stavite
nekoliko sekundi na brzinu 1. Zatim dodajte vodu kroz otvor na poklopcu. Mijesite
8minuta. Tijesto pokrijte sa kuhinjskom krpom i ostavite da stoji 15minuta na
toplom mjestu. Premjestite tijesto na pobrašnjenu podlogu i izradite ga rukama.
Oblikujte rukama u kvadrat. Presavijte krajeve, pa opet izradite rukama. Ponovite.
Oblikujte štrucu. Stavite u kalup dugačak 25cm. Lagano navlažite štrucu i po njoj
posipajte zobene pahuljice. Pokrijte sa vlažnom kuhinjskom krpom i ostavite da se
diže nekih 60minuta na toplom mjestu. Napravite rez od 1cm na štruci. Stavite u
zagrijanu pnicu na 240°C, zajedno s posudom u kojoj je voda kako bi kruh dobio
lijepu zlatnu boju. Pecite oko 30minuta. Izvadite iz kalupa i ostavite da se ohladi
na rešetki.
Stavite brašno u inox posudu i napravite dvije rupe u brašnu, sol stavite u jednu a
kvasac, šećer, mlijeko i vodu u drugu. Sol i kvasac ne smiju se dodavati zajedno jer
kvasac loše reagira u kontaktu sa soli. Dodajte jaja u posudu i stavite nastavak za
miješenje. Odaberite brzinu 1i mijesite 15sekundi, stavite na brzinu 2i mijesite još
2minute i 45sekundi. Bez da zaustavljate uređaj dodajte maslac koji ne bi trebao
biti previše mekan (ostavite ga na sobnoj temperaturi prije uporabe) jednu minutu.
Nastavite s miješenjem pet minuta na brzini 2, zatim još pet minute na brzini 3.
Pokrijte tijesto i ostavite da se diže 2sata na sobnoj temperaturi. Izradite ga rukama
u kuglu i ostavite još 2sata u hladnjaku: nakon toga opet izradite tijesto u kuglu.
Zatim ga prekrijte s prianjajom folijom i ostavite preko noći u frižideru. Slijedeći
dan, namastite maslacem kalup za brioš. Oblikujte tijesto u kuglu. Postavite u kalup i
ostavite da se diže na toplome sve dok tijesto ne naraste (2-3sata). Stavite u pećnicu
na 180°C i ostavite da se peče 25minuta.
