Upozorenje za bezglutenske programe
Za pravljenje bezglutenskih hlebova i kolača, moraju da se koriste
programi 1, 2 i 3. Za svaki program je dostupna jedna težina.
Bezglutenski hleb i kolači su pogodni za osobe, koje imaju
intoleranciju na gluten (celijakiju), koji je prisutan u nekoliko žitarica
(pšenica, ječam, raž, ovas, kamut, spelta, itd.).
Važno je izbegavati unakrsnu kontaminaciju sa brašnima koja sadrže
gluten. Vodite posebnu brigu o čišćenju kalupa i lopatice za mešenje,
kao i svog drugog pribora, koji se koristi za pravljenje hleba i kolača
bez glutena. Potrebno je voditi računa i da kvasac koji se koristi ne
sadrži gluten.
Bezglutenski recepti su sastavljeni na bazi smesa (nazivaju se
gotovim mešavinama) za bezglutenski hleb, koji su ili marke Schär
ili Valpiform.
Mešavine raznih vrsta brašna je potrebno prosejati sa kvascem, da bi se
sprečio nastanak grudvica.
Kada program počinje, potrebno je pomoći pri procesu mešenja:
lopaticom koja nije metalna stružite sa zidova sve neizmešane sastojke i
potiskujte ih prema sredini kalupa.
Bezglutenski hleb ne može da naraste toliko kao tradicionalni hleb. Bit
će gušće konzistencije i svetlije boje od normalnog hleba.
Sve marke gotove mešavine za testo ne daju iste rezultate: možda će biti
potrebno prilagoditi recepte. Zbog toga preporučujemo da napravite
nekoliko testova (pogledajte primer u nastavku).
Primer: podesite količinu tečnosti.
Izuzetak: testo za kolače mora da bude prilično tečno.
