Mousseline de pommes
- 600 gr de pommes
- 1 demi-citron
- 1 gousse de vanille
- 80 gr de sucre poudre
- 1 cuillère à soupe de rhum
Mettez les pommes cuites, le jus de citron, le sucre et le rhum dans le bol de lʼOptimo . Mixez avec le couteau
pendant 15 à 20 secondes. Laissez refroidir et servez.
Sauce Pesto
- 150 gr de parmesan
- 5 branches de basilic frais
- 3 gousses dʼail
- 4 clous de girofle
- 15 cerneaux de noix
- 1/2 verre dʼ huile dʼolive
Versez le basilic, les gousses dʼail et les clous de girofle dans le bol. Mixez finement
Versez le parmesan en petits morceaux ainsi que les cerneaux de noix dans le bol et hachez finement
pendant 20s. Ajoutez lʼ huile dʼolive et mixez pour avoir une pâte homogène.
Guacamole
- 3 gros avocats
- 2 gousses dʼail
- 6 piments
- 1/2 oignon
- 3 branches de coriandre
- 1 filet de jus de citron
- Sel et poivre selon votre goût
Hachez finement lʼail , lʼoignon, le coriandre et les piments.
Pelez les avocats et découpez-les dans le bol de lʼOptimo.
Mixer 20s pour obtenir une purée homogène. Ajoutez sel et poivre selon votre goût.
Anchoiade
- 15 filets dʼanchois à lʼhuile
- 2 gousses dʼail
- 3 jaunes dʼœuf dur
- Huile dʼolives
Hachez finement les gousses dʼail. Rajoutez les anchois et mixez de nouveau. Incorporez les jaunes dʼœufs
avec 3 cuillères à soupe dʼhuile. Mixez pour obtenir une crème.
Rajoutez de lʼhuile suivant la consistance voulue .
