Schokoladen-Fondue
Für 6 Personen: • 500 g Zartbitterschokolade • 2 x 20 cl Crème fraîche
• 2 Esslöffel Cognac (beliebig) • frisches Obst in Stücke geschnitten : Birnen,
Bananen, Äpfel, Pfirsiche, Aprikosen, Ananas, Pflaumen
Thermostat auf 1 stellen. Crème fraîche etwa 2 Minuten lang zergehen lassen,
Schokolade in kleinen Stücken hinzufügen und 10 Minuten lang unter Rühren
zergehen lassen, bis die Masse homogen ist. Dann 2 Esslöffel Cognac hinzufügen.
Während des Essens den Thermostat auf 1 lassen. 1 oder 2 Stücke Obst
aufspießen und in die Schokolade tauchen.
Dazu reicht man: Süße Stückchen, Lebkuchen, Kuchen, Gebäck, Mandeln,
Haselnüsse.
Soßen auf Mayonnaise-Basis
Feuer-Mayonnaise: Mayonnaise, Ei, Senf, 2 Messerspitzen Pimentpaste.
Cocktail-Soßen: Mayonnaise, 3 Esslöffel Ketchup, 1 Esslöffel mittelscharfer Senf,
1 Esslöffel Whisky oder Cognac, Cayenne-Pfeffer, etwas Zitronensaft.
Rosa Soße: Mayonnaise, 1 Teelöffel Ketchup, Cognac.
Estragon-Soße: Mayonnaise, Estragon.
Marius-Soße: Mayonnaise, 6 fein gehackte Knoblauchzehen.
Pikante Soße: Mayonnaise, 1 Teelöffel gehackte Schalotten, gehackte
Essiggurken, englischen Senf. 1 Esslöffel Kapern, Petersilie.
Ungarische Soße: Mayonnaise, 1 Esslöffel Paprika, 1 Esslöffel gehackte
Schalotten.
Fransözische Tatare-Soße: Mayonnaise, Paprika, 1 Messerspitze Cayenne-
Pfeffer, 1 Esslöffel Cognac, 1 Esslöffel Kapern.
Paprika-Soße: Mayonnaise, Paprika, 1 Messerspitze Cayenne-Pfeffer, 1 Esslöffel
Kapern.
